Waterless Cooking Techniques

HOW TO COOK MEATS
Always preheat pan on medium heat approximately five minutes, or until a few drops of cold water will bead and run around in the pan like little BB's. Place meat in the pan. Meat will stick to hot pan at start, but will loosen itself when sufficiently browned. If meat does not stick to the pan, it indicates the pan was not hot enough and the meat will not brown properly. After browning, place the lid on the pan and wait for the whistle. Close the valve, turn to low, and finish cooking to the desired doneness. If the meat is frozen, start with a cold pan.

HOW TO COOK VEGETABLES
Either rinse or add 2 or 3 Tablespoons of water to vegetables or fruit in the pan with lid [Valve Open]. Start on medium heat until the whistle sounds. Close the valve, turn the burner to low, and finish cooking to desired tenderness. Seasonings are optional.

FOODS THAT CANNOT BE COOKED WATERLESS OR GREASELESS
Fried eggs
Fried potatoes
Fried fish
French fries
Dried foods like macaroni, spaghetti, beans, rice, etc.

Featured Recipe:

Pork Chop Casserole

In cold electric skillet add the following:
1 layer sliced potatoes
1 layer sliced onions
Salt, pepper, dot with 100% corn oil margarine, and lightly cover with sifted flour.
REPEAT LAYER
Mix 1 can Campbell's Cream of Celery soup and 1/2 cup of milk. Pour over potato layers. Place 4 to 6 pork chops on top of soup and potatoes. Cover with lid and set termperature to 375 degrees. When steam escapes around lid, reduce temperature gradually until steam no longer escapes. Cook one hour or until pork chops are tender.
